500克雞肉片,切塊
1根香茅,切片
8棵小洋蔥 / 2茶匙芫荽末 / 半茶匙薑黃根粉 / l茶匙鹽 / 2茶匙黑糖 / 4湯匙油
Directions:
黃梨沙爹醬:
8塊辣椒幹,浸水 / 8棵小洋蔥 / 1棵蒜頭 / 4粒石栗 / 1根香茅 / 2湯匙油 / 1懷椰漿 / 1揚湯羅望子果,浸水,榨汁 / 1茶匙黑精 / 半杯炒花生,略磨碎 / 3 / 4杯黃梨,切碎
將香茅及小洋蔥攪碎後,再加入芫荽、薑黃根粉、鹽、糖和油。放入雞肉醃泡2小時。過後,將醃泡好的雞串在竹枝上塗些油,放在熱炭上燒烤。
蘸料做法:
將辣椒、小洋蔥、蒜頭、石栗和香茅一起 攪碎。把油燒熱,並把攪碎後的用料炒香。加入椰汁,煮滾。放入羅望子果汁、糖、花生和鹽調味。慢火煨煮,然後等冷卻了再加入碎黃梨。
